Ingrédients :

Légumes grillés :
1 courgette verte et 1 courgette jaune
1 poivron jaune
2 tomates
1 gousse d’ail
une poignée d’olives noires
quelques tomates confites
quelques feuilles de basilic
4 cuillères à soupe d’huile d’olive
sel et poivre
sirop balsamique

Polenta :
90 g de polenta
470 ml d’eau
1/2 cuillère à café de sel
50 g de parmesan râpé
20 g de beurre
1 cuillère à café d’huile d’olive
2 gousses d’ail hachées
1 cuillère à soupe de crème

Préparation des légumes grillés :

Couper les légumes en forme souhaitée.

Faire chauffer l’huile dans une sauteuse à feu moyen.

Ajouter les légumes, en lots séparés et cuire un côté jusqu’à ce qu’ils soient bien dorés.

Retourner et cuire de l’autre côté.

Ne surchargez pas les légumes dans la poêle, si vous voulez que les légumes conservent leur forme.

Ajouter l’ail, les olives, le basilic et les tomates confites.

Préparation de la polenta :

Dans une casserole profonde mettre le beurre et l’huile d’olive, faire chauffer à feu moyen.

Une fois le beurre fondu, ajouter l’ail et faire revenir pendant 20 secondes.

Ajouter l’eau et le sel et porter l’eau à ébullition.

Baisser à feu moyen et verser la semoule en pluie fine tout en fouettant jusqu’à épassissement.

Réduire à feu moyen-doux et à l’aide d’une cuillère en bois, cuire pendant environ 30 minutes en brassant régulièrement, jusqu’à texture souple.

Éteindre le feu puis ajouter le parmesan et la crème et mélanger délicatement jusqu’à ce que le fromage fonde.

Pour servir placer la polenta cuite dans un bol, placer les légumes par dessus, mettre un filet de sirop balsamique et servir sans attendre
